Best 7UP Lemon Cake (Moist & Buttery Classic)

This old-fashioned 7UP Lemon Cake is rich, buttery, and incredibly moist thanks to the soda. The lemon zest and juice give it a fresh citrus flavor that makes it perfect for holidays, gatherings, or anytime you want a show-stopping dessert.

 

 

 

Ingredients

3 cups all-purpose flour

½ teaspoon salt

1 cup 7UP soda (room temperature)

2 tablespoons lemon zest

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

You will also need:

1 cup (2 sticks) unsalted butter, softened

2½ cups granulated sugar

5 large eggs, room temperature

Lemon Glaze (Optional but Recommended)

1½ cups powdered sugar

2–3 tablespoons fresh lemon juice

1 teaspoon lemon zest (optional)

 

 

 

Instructions

1️⃣ Prepare the Pan

Preheat oven to 325°F (160°C).

Grease and flour a 10–12 cup Bundt pan very well.

2️⃣ Mix Dry Ingredients

In a bowl, whisk together flour and salt. Set aside.

3️⃣ Cream Butter & Sugar

In a large bowl, beat butter until smooth and creamy (about 2–3 minutes).

Gradually add sugar and beat until light and fluffy (about 4–5 minutes).

4️⃣ Add Eggs

Add eggs one at a time, mixing well after each addition.

5️⃣ Add Flavorings

Mix in lemon zest, lemon juice, and vanilla extract.

6️⃣ Combine with Flour & 7UP

Add flour mixture alternately with 7UP, beginning and ending with flour.

Mix gently until just combined. Do not overmix.

7️⃣ Bake

Pour batter evenly into prepared pan.

Bake for 70–80 minutes, or until a toothpick inserted comes out clean.

8️⃣ Cool

Let cake cool in pan for 10–15 minutes.

Turn out onto a wire rack and cool completely.

Make the Glaze

Whisk powdered sugar and lemon juice until smooth.

Drizzle over completely cooled cake.

Let glaze set before slicing.

✔ Do not overmix once flour is added.

✔ For extra lemon flavor, poke small holes in warm cake and brush with a little lemon syrup (lemon juice + sugar heated together).
