Ingredients
3 medium zucchini (courgettes), grated
1 teaspoon garlic powder
1 teaspoon salt
1–2 eggs
2 tablespoons coconut flour
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon black pepper
1/2 teaspoon dried oregano or Italian herbs
2 tablespoons chopped parsley or green onions
1 tablespoon olive oil or melted butter
Instructions
Prepare the zucchini
Grate the zucchini and place it in a bowl. Sprinkle with salt and let it sit for 10 minutes. Squeeze out as much excess liquid as possible using a clean kitchen towel.
Mix the ingredients
Add the eggs, coconut flour, garlic powder, black pepper, herbs, parsley, mozzarella, and Parmesan cheese. Mix everything well until fully combined.
Bake
Preheat the oven to 190°C (375°F). Lightly grease a baking dish or line it with parchment paper. Spread the zucchini mixture evenly into the dish and drizzle with olive oil or melted butter.
