CHRISTMAS DESSERT IDEAS
Malva Pudding
A soft, spongy South African classic soaked in warm vanilla sauce — perfect for Christmas and winter gatherings.
This is a double recipe (you can halve it for a single pudding).
Ingredients
Milk & Jam Mixture
2 cups milk
2 tablespoons butter or margarine
2 tablespoons apricot jam
2 tablespoons vinegar (white or apple cider)
Egg Mixture
2 eggs
1½ cups granulated sugar
Dry Ingredients
2½ cups all-purpose flour
2 teaspoons baking powder
2 teaspoons bicarbonate of soda
½ teaspoon salt
Sauce Ingredients
2 cups milk
2 tablespoons butter or margarine
1½ cups sugar
2 teaspoons vanilla extract
Instructions
1. Prepare the Milk Mixture
In a saucepan, bring the milk, butter, and apricot jam to a boil.
Stir until everything is melted and well combined.
Remove from heat, add the vinegar, mix well, and set aside to cool slightly.
2. Make the Batter
In a large bowl, beat the eggs and sugar until light and creamy.
Slowly add the cooled milk mixture to the egg mixture and mix until combined.
Sift together the flour, baking powder, bicarbonate of soda, and salt.
Add the dry ingredients to the wet mixture and beat well until smooth.
3. Bake
Pour the batter into a greased ovenproof dish or bowl.
Bake at 180°C (350°F) for 40–50 minutes, or until a knife inserted in the center comes out clean.
4. Prepare the Sauce
While the pudding is baking, bring the milk, butter, sugar, and vanilla to a boil.
Stir until the sugar is completely dissolved.
5. Finish the Pudding
Remove the pudding from the oven.
Immediately pour the hot sauce over the hot pudding.
Allow it to soak for 10–15 minutes before serving.
Serving Suggestions
Serve warm with custard, whipped cream, or vanilla ice cream
