Creamy Cheesy Chicken & Potato Bake
This comforting chicken and potato casserole is loaded with tender seasoned potatoes, juicy chicken, creamy garlic sauce, and a golden cheesy topping. It’s an easy family-style dinner that comes out perfectly hearty, creamy, and full of flavor.
Ingredients
For the Potato Layer
4 medium potatoes, peeled and sliced
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon black pepper
1 teaspoon mixed spices or seasoning of choice
2 tablespoons vegetable oil
For the Chicken Filling
1 onion, finely chopped
2 chicken fillets, diced
1 teaspoon Provençal herbs
2 garlic cloves, minced
Salt and black pepper to taste
For the Creamy Topping
2 eggs
30 g (1 oz) sour cream
60 g (2 oz) cheese, grated
Fresh dill, chopped
Instructions
Prepare the potatoes
Preheat the oven to 190°C (375°F).
In a large bowl, toss the sliced potatoes with salt, paprika, black pepper, spices, and vegetable oil until evenly coated.
Cook the chicken mixture
Heat a skillet over medium heat. Add the chopped onion and sauté until soft and fragrant.
Add the diced chicken fillet, garlic, Provençal herbs, salt, and pepper. Cook for 6–8 minutes until the chicken is lightly golden.
Make the creamy sauce
In a small bowl, whisk together the eggs, sour cream, grated cheese, and fresh dill until smooth.
Assemble the casserole
Arrange the seasoned potatoes in a greased baking dish. Spread the chicken mixture evenly over the top.
Pour the creamy cheese mixture over everything.
Bake
Cover with foil and bake for 35 minutes. Remove the foil and bake for another 10–15 minutes, or until the potatoes are tender and the top is golden and bubbly.
Serve
Let the casserole rest for 5 minutes before serving. Garnish with extra fresh dill and enjoy warm.
