Creamy Chicken Enchilada Soup – A Cozy, Cheesy 20-Minute Comfort Bowl

Warm, rich, and packed with bold Tex-Mex flavors, this creamy chicken enchilada soup is the perfect quick meal for busy days. It’s hearty, satisfying, and comes together in just 20 minutes—ideal when you want something comforting without spending hours in the kitchen.

 

 

 

Ingredients:

2 cups cooked chicken, shredded (rotisserie works great)

1 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

2 cups chicken broth

1 cup red enchilada sauce

1 cup corn kernels (fresh, frozen, or canned)

1 can (400g) black beans, drained and rinsed

1 tsp ground cumin

1 tsp chili powder

½ tsp smoked paprika (optional)

Salt and pepper to taste

1 cup heavy cream (or half-and-half for a lighter option)

1 cup shredded cheddar cheese

 

 

 

 

Instructions:

Sauté the aromatics:

Heat olive oil in a large pot over medium heat. Add chopped onion and cook until soft (about 3–4 minutes). Stir in garlic and cook for another 30 seconds until fragrant.

Build the base:

Pour in the chicken broth and enchilada sauce. Stir well to combine.

Add the goodness:

Add shredded chicken, corn, black beans, cumin, chili powder, and smoked paprika. Mix everything together.

Simmer:

Let the soup simmer for 8–10 minutes so the flavors blend beautifully.

Make it creamy:

Reduce heat to low, then stir in the heavy cream and shredded cheese. Keep stirring until the cheese is fully melted and the soup is smooth and creamy.

Season & serve:

Taste and adjust salt and pepper as needed. Serve hot.

Tips:
