Ingredients

2 lbs baby potatoes, washed and halved

2 cups evaporated milk

1 cup shredded cheddar cheese

2 tablespoons butter

1 small onion, finely diced

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

1 teaspoon dried parsley

2 tablespoons cornstarch

2 tablespoons water

Instructions

Prepare the Potatoes

Place the baby potatoes into the slow cooker. Add the diced onion and minced garlic.

Make the Creamy Sauce

In a bowl, whisk together the evaporated milk, salt, pepper, paprika, and parsley. Pour the mixture over the potatoes.

Slow Cook to Perfection

Add the butter on top, cover, and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are fork-tender.

Thicken the Sauce
