Rich, creamy, and loaded with comforting homestyle flavor, this Amish-inspired beef and corn casserole is the perfect cozy dinner for busy nights. Tender seasoned beef, sweet corn, creamy sauce, and gooey melted cheddar are baked together under a buttery golden topping for a warm and satisfying family favorite!

Ingredients

For the Casserole

1 lb (450 g) ground beef

1 small onion, finely diced

2 cloves garlic, minced

2 cups sweet corn kernels (fresh, canned, or frozen)

1 can (10.5 oz) cream of mushroom or cream of chicken soup

1 cup sour cream

1/2 cup milk

2 cups shredded cheddar cheese

1 tsp paprika

1/2 tsp black pepper

1/2 tsp salt

1/2 tsp dried parsley

For the Crunchy Topping

1 cup crushed buttery crackers or cornflakes

3 tbsp melted butter

1/4 cup grated parmesan cheese

 

 

 

 

Instructions

Preheat your oven to 375°F (190°C). Lightly grease a baking dish.

In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and fully cooked. Drain excess grease if needed.

Add the garlic and cook for 1 minute until fragrant.

Stir in the corn, cream soup, sour cream, milk, paprika, salt, pepper, and parsley. Mix until creamy and well combined.

Fold in 1 1/2 cups of shredded cheddar cheese and stir until melted slightly.

Spread the mixture evenly into the prepared baking dish.

In a small bowl, combine crushed crackers, melted butter, and parmesan cheese. Sprinkle the topping evenly over the casserole.

Finish with the remaining cheddar cheese on top.

Bake for 25–30 minutes, or until hot, bubbly, and golden brown on top.

Let rest for 5 minutes before serving.
