Creamy Surimi Crab Salad (Fresh, Crunchy & Delicious)
A light and refreshing salad made with sweet surimi (crab sticks), crisp vegetables, and a creamy dressing that brings everything together. Perfect as a side dish, sandwich filling, or quick chilled snack.
Ingredients:
250g surimi (crab sticks), shredded
2 cups white cabbage, finely chopped
1 cup carrot, grated
2–3 tbsp sweet corn (optional, for extra sweetness)
2 tbsp mayonnaise
1 tbsp plain yogurt (optional for a lighter taste)
1 tsp lemon juice
½ tsp salt (or to taste)
¼ tsp black pepper
½ tsp Dijon mustard (optional, for extra flavor)
Fresh parsley or dill, chopped (optional garnish)
Instructions:
In a large bowl, combine the shredded surimi, chopped cabbage, and grated carrot.
In a small bowl, mix mayonnaise, yogurt, lemon juice, salt, pepper, and mustard until smooth and creamy.
Pour the dressing over the salad and toss gently until everything is well coated.
Add sweet corn if using, and mix again lightly.
Cover and refrigerate for 15–30 minutes to let the flavors blend.
Garnish with fresh herbs before serving.
Serving Idea: Serve chilled as a side dish, in wraps, or inside sandwiches for a quick and tasty meal.
