Easy Homemade Crunch Bars (No-Bake)
Ingredients:
- 3 cups crispy rice cereal
- 1 cup semi-sweet chocolate chips
- 1/2 cup creamy peanut butter
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- Optional: 1/2 cup chopped nuts or chocolate drizzle for topping
Instructions:
- Prepare the pan:
Line an 8×8-inch (or 9×9-inch) baking pan with parchment paper, leaving some overhang for easy removal later. - Melt the chocolate mixture:
In a medium saucepan over low heat, melt together the chocolate chips, peanut butter, and butter. Stir constantly until smooth. Remove from heat and stir in vanilla extract. - Combine with cereal:
Pour the crispy rice cereal into a large mixing bowl. Pour the melted chocolate mixture over the cereal and gently fold until all the cereal is coated evenly. - Transfer to pan:
Pour the mixture into the prepared pan. Use a spatula (or wax paper) to press it down evenly and compactly. - Optional topping:
Sprinkle chopped nuts, drizzle melted white or dark chocolate, or add mini chocolate chips on top for extra flavor and texture. - Set:
Refrigerate the pan for at least 1–2 hours, or until the bars are firm and set. - Cut and serve:
Lift the bars out using the parchment overhang. Cut into squares or rectangles with a sharp knife. - Storage:
Store in an airtight container at room temperature for up to 5 days, or in the fridge for up to 2 weeks.
These bars are chewy, chocolatey, and crunchy all at once—perfect for a quick treat or snack!
