Easy Swirled Cinnamon Pudding Cake
This incredibly moist and fluffy cake is packed with warm cinnamon flavor and a soft, tender crumb thanks to the pudding mix. It’s simple to make, smells amazing while baking, and disappears fast at any gathering!
Ingredients
Cake Batter:
1 box vanilla cake mix
1 box (3.4 oz) instant vanilla pudding mix (dry, not prepared)
4 large eggs
1 cup milk
1/2 cup vegetable oil
Cinnamon Swirl:
1/2 cup granulated sugar
1 tablespoon ground cinnamon
Optional Glaze (Highly Recommended!):
1 cup powdered sugar
2–3 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
1️⃣ Preheat & Prepare
Preheat oven to 350°F (175°C).
Grease and lightly flour a 9×13-inch baking dish or a Bundt pan.
2️⃣ Make the Batter
In a large mixing bowl:
Combine cake mix, dry pudding mix, eggs, milk, and oil.
Beat with an electric mixer on medium speed for about 2–3 minutes until smooth and creamy.
3️⃣ Make the Cinnamon Swirl
In a small bowl:
Mix together the sugar and cinnamon.
4️⃣ Layer & Swirl
Pour half of the cake batter into the prepared pan.
Sprinkle half of the cinnamon sugar mixture evenly over the batter.
Pour the remaining batter on top.
Sprinkle the remaining cinnamon sugar over the top.
Use a knife to gently swirl through the batter to create a marbled effect (don’t overmix).
5️⃣ Bake
Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
Let cool in the pan for about 10–15 minutes, then transfer (if using Bundt) to a wire rack to cool completely.
6️⃣ Add the Glaze (Optional but Amazing!)
Whisk together powdered sugar, milk, and vanilla until smooth.
Drizzle over the cooled cake.
Tips for Success
Don’t over-swirl or you’ll lose the marbled look.
For extra richness, substitute half the milk with sour cream.
Add chopped pecans for a cinnamon-roll vibe.
Serve slightly warm for maximum comfort!
