Fajita Chicken Casserole
Ingredients
4 thin sliced chicken breasts
3 bell peppers, sliced (red, green, yellow)
1 large onion, sliced
1 packet fajita seasoning mix
1 cup shredded cheddar cheese
2 tbsp olive oil
Fresh cilantro, chopped
Lime wedges
Salt and black pepper
Instructions
Preheat the oven to 375°F (190°C).
Place the sliced peppers and onions into a glass baking dish and drizzle with olive oil.
Lay the chicken breasts on top of the vegetables.
Sprinkle the fajita seasoning evenly over everything and season lightly with salt and pepper.
Bake for 20–25 minutes until the chicken is cooked through and the vegetables are tender.
Top with shredded cheddar cheese and return to the oven for a few minutes until melted.
Finish with fresh cilantro and a squeeze of lime before serving.
