Mexican Taco Lasagna

This Mexican Taco Lasagna is a delicious fusion of taco flavors layered in a comforting, cheesy lasagna-style dish. It’s perfect for a weeknight dinner or serving at your next family gathering! Ingredients:

For the Filling:

 

1 pound ground beef

 

1 packet taco seasoning

 

1/4 cup water

 

1 can Ro*Tel diced tomatoes with chiles, drained

 

1 can Nacho Cheese Soup

 

1/4 cup sour cream

 

1 cup grated cheddar cheese

 

For the Layers:

 

12 8-inch soft tortillas

 

For Topping (optional):

 

Guacamole

 

Cilantro, chopped

 

Sour cream

 

 

 

 

Directions:

1️⃣ Prepare the Meat Filling:

 

Preheat your oven to 350°F (175°C) and spray a 9×9-inch baking dish with non-stick spray.

 

In a large skillet over medium heat, cook the ground beef, breaking it up as it cooks until browned. Drain any excess grease.

 

Add the taco seasoning and water to the beef. Cook for about 2 minutes, stirring to combine.

 

2️⃣ Make the Cheese Mixture:

 

In a medium bowl, combine the Ro*Tel diced tomatoes with chiles, Nacho Cheese Soup, and sour cream. Stir in the cooked beef mixture. Mix until well combined.

 

3️⃣ Assemble the Lasagna:

 

Place 3 tortillas in the bottom of the prepared baking dish. Layer with 1/3 of the meat mixture.

 

Repeat the layering process, ending with a final layer of tortillas on top. Sprinkle the grated cheddar cheese evenly over the top.

 

4️⃣ Bake the Lasagna:

 

Bake the lasagna in the preheated oven for about 20 minutes, or until the cheese is hot and melted.

 

 

 

5️⃣ Serve and Enjoy:

 

Once baked, remove the lasagna from the oven and let it cool slightly before serving.

 

Top with chopped cilantro, a generous scoop of guacamole, and a dollop of sour cream as desired.
