Fiery Herb-Grilled Whole Fish with Lemon & Garlic
This beautifully grilled whole fish is packed with bold Mediterranean-inspired flavors. Marinated in a zesty blend of fresh herbs, garlic, lemon, and warm spices, then grilled until perfectly charred and crispy on the outside, it’s a stunning dish that’s both simple and unforgettable. Ingredients
1 whole fish (such as sea bass, snapper, or branzino), cleaned and scored
¼ cup olive oil
¼ cup fresh lemon juice
¼ cup fresh parsley, finely chopped
½ cup onion, finely chopped
¼ cup garlic, minced
¼ cup tomato paste
½ cup water
2 tablespoons mixed spices (such as paprika, cumin, coriander, turmeric, black pepper, and a pinch of cayenne)
1 teaspoon salt, or to taste
½ teaspoon black pepper
Lemon slices, for serving
Fresh parsley, for garnish
Instructions
In a bowl, combine the olive oil, lemon juice, parsley, onion, garlic, tomato paste, water, mixed spices, salt, and black pepper. Stir until smooth and well blended.
Rub the marinade generously all over the fish, making sure to coat the inside cavity and work it into the scored cuts.
Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.
Place the fish on the grill and cook for 6–8 minutes per side, depending on its size, until the skin is crispy and slightly charred.
Carefully flip the fish using a wide spatula or grill basket.
The fish is done when it flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Transfer to a serving platter and garnish with fresh parsley and lemon slices.
Serving Suggestions
Serve with grilled vegetables, rice, couscous, or a fresh salad. A side of garlic sauce or spicy harissa makes an excellent accompaniment.
Tips
A grill basket makes flipping the fish much easier.
For extra smoky flavor, grill over charcoal.
You can also bake the fish at 400°F (200°C) for 25–30 minutes if grilling isn’t an option.
