Golden Capirotada with Extra Pecans & Raisins

 

 

Warm, sweet, and deeply comforting, this traditional Mexican bread pudding is a beloved dessert often shared during special gatherings and holidays. Layers of toasted bread soak up a fragrant cinnamon-piloncillo syrup, while melted cheese, plump raisins, and generous handfuls of pecans create a delicious contrast of textures and flavors.

This extra-indulgent version is packed with even more pecans and raisins, making every bite rich, nutty, and irresistibly satisfying. It’s the perfect dessert to serve warm with family and friends.

Ingredients

1 piloncillo cone (about 8 ounces)

1 cinnamon stick

1 tablespoon pure vanilla extract

4 tablespoons brown sugar

2 cups water

1 loaf French bread, sliced and lightly toasted

1½ cups shredded mozzarella cheese

1 cup shredded mild cheddar cheese

½ cup sweetened coconut flakes (optional)

¾ cup raisins

½ cup chopped walnuts

1 cup chopped pecans, plus extra for topping

 

 

 

 

 

Instructions

Preheat your oven to 350°F (175°C).

In a medium saucepan, combine the piloncillo, cinnamon stick, vanilla extract, brown sugar, and water.

Bring to a gentle simmer over medium heat, stirring occasionally, until the piloncillo has completely dissolved and the syrup has slightly thickened, about 10 minutes.

Remove from the heat and discard the cinnamon stick.

Arrange a layer of toasted bread slices in a greased 9×13-inch baking dish.

Sprinkle with a portion of the mozzarella, cheddar, coconut flakes (if using), raisins, walnuts, and pecans.

Repeat the layers until all ingredients are used, ending with a generous topping of cheese, extra pecans, and a few additional raisins.

Slowly pour the warm piloncillo syrup evenly over the entire casserole, making sure all the bread is well soaked.

Let the dish rest for 5 to 10 minutes so the bread can absorb the flavorful syrup.

Cover loosely with foil and bake for 20 to 25 minutes, until heated through, bubbly, and the cheese is beautifully melted.

Remove from the oven and allow it to cool for 10 minutes before serving.

Serving Suggestions

Serve warm on its own, or top with a scoop of vanilla ice cream or a drizzle of sweet cream for an extra-special treat.

Tips

For the best texture, use day-old bread.

You can substitute Monterey Jack or queso fresco for a more traditional flavor.
