3 cups all-purpose flour

1/2 cup brown sugar, packed
3 large eggs
2 teaspoons vanilla extract

3 cups apples, peeled, cored, and diced

Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or a bundt pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Stir in the sour cream until smooth and fully combined.
Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Do not overmix.
Fold in the diced apples and chopped nuts, if using.
Spread the batter evenly into the prepared pan. Sprinkle the cinnamon sugar mixture over the top.
