Sticky Honey BBQ Meatloaf with Golden Roasted Potatoes

 

 

 

A comforting family favorite, this juicy meatloaf is glazed with a sweet and smoky barbecue sauce that caramelizes beautifully in the oven. Paired with crispy, herb-roasted potatoes, it’s the perfect hearty meal for a cozy dinner at home.

Ingredients

For the Meatloaf

1 pound ground beef

1/2 cup breadcrumbs

1/4 cup onion, finely chopped

1 large egg

2 cloves garlic, minced

1/4 cup milk

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon Italian seasoning

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

For the Sticky BBQ Glaze

1/2 cup barbecue sauce

2 tablespoons honey

1 tablespoon brown sugar

1 teaspoon apple cider vinegar

For the Roasted Potatoes

1 1/2 pounds baby potatoes, halved

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried rosemary or thyme

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

 

 

 

 

Instructions

Preheat your oven to 375°F (190°C). Line a baking sheet or lightly grease a baking dish.

In a large bowl, combine the ground beef, breadcrumbs, chopped onion, egg, garlic, milk, ketchup, Worcestershire sauce, Dijon mustard, Italian seasoning, smoked paprika, salt, and pepper. Mix gently until just combined.

Shape the mixture into a loaf and place it in the prepared baking dish or on one side of a large baking sheet.

In a small bowl, whisk together the barbecue sauce, honey, brown sugar, and apple cider vinegar. Spread half of the glaze evenly over the meatloaf.

In another bowl, toss the halved potatoes with olive oil, garlic powder, rosemary, salt, and pepper. Arrange them around the meatloaf on the baking sheet.

Bake for 35 minutes. Remove from the oven and brush the meatloaf with the remaining glaze.

 

 

 

Return to the oven and bake for an additional 20–25 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C) and the potatoes are golden and tender.

Let the meatloaf rest for 10 minutes before slicing.

Garnish the roasted potatoes with fresh parsley and serve warm alongside thick slices of the sticky BBQ meatloaf.

Pair with steamed green beans, a crisp garden salad, or buttery corn for a complete and satisfying meal.
