This Cottage Cheese & Spinach Crustless Quiche is the perfect combination of wholesome and comforting. Made with creamy cottage cheese, tender spinach, and fluffy eggs, every bite is rich in flavor while staying light and satisfying. With no crust to fuss over, this simple baked quiche comes together quickly and makes a delicious choice for breakfast, brunch, meal prep, or even a cozy light dinner.

Ingredients

6 large eggs

1 cup cottage cheese

1 cup fresh spinach, chopped

1 cup shredded mozzarella or cheddar cheese

1/2 cup milk

1 small onion, finely diced

1 clove garlic, minced

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika

Optional: pinch of nutmeg or red pepper flakes for extra flavor

 

 

 

 

Instructions

Preheat your oven to 375°F (190°C). Lightly grease a pie dish or baking dish.

Heat olive oil in a skillet over medium heat. Sauté the onion for 3–4 minutes until softened, then add garlic and spinach. Cook until the spinach wilts. Remove from heat.

In a large mixing bowl, whisk together the eggs, cottage cheese, milk, salt, pepper, and paprika until smooth and creamy.

Stir in the cooked spinach mixture and shredded cheese.

Pour the mixture into the prepared baking dish and spread evenly.

Bake for 30–35 minutes, or until the center is set and the top is lightly golden.

Let the quiche cool for 5–10 minutes before slicing and serving.
