This comforting dish combines tender green beans and soft potatoes with onion and savory seasonings. It’s a classic side dish that pairs perfectly with chicken, beef, or fish—and it’s easy to make with simple ingredients.
Ingredients (Serves 4–6)
2 lbs (900 g) fresh green beans, trimmed
2 russet potatoes, diced into 1-inch cubes
½ onion, diced
2 cloves garlic, minced
2 tablespoons olive oil or butter
1 cup (240 ml) chicken broth or water
½ teaspoon salt (or to taste)
½ teaspoon black pepper
½ teaspoon paprika (optional)
1 teaspoon dried thyme or Italian seasoning (optional)
Instructions
Step 1: Prepare the vegetables
Wash and trim the ends of the green beans.
Dice the potatoes into evenly sized cubes.
Chop the onion and mince the garlic.
Step 2: Cook the onion and garlic
Heat olive oil or butter in a large pot or deep pan over medium heat.
Add diced onion and cook for 3–4 minutes until soft.
Add garlic and cook for 30 seconds until fragrant.
Step 3: Add potatoes and green beans
Add diced potatoes and green beans to the pot.
Stir well to combine with the onion and garlic.
Step 4: Add liquid and seasoning
Pour in chicken broth or water.
Add salt, pepper, paprika, and thyme.
Stir gently.
Step 5: Simmer
Cover and simmer on medium-low heat for 20–25 minutes.
Stir occasionally.
Cook until potatoes are tender and green beans are soft.
Step 6: Serve
Taste and adjust seasoning if needed.
Serve warm as a side dish.
