Ingredients

Main Ingredients:

12 lasagna noodles

1 cup ricotta cheese

1 large egg (optional, for creamier filling)

1 package (6–8 oz) pepperoni slices

2 cups pizza sauce or marinara sauce

2 cups shredded mozzarella cheese

2 tablespoons grated Parmesan cheese (optional)

1 teaspoon Italian seasoning

½ teaspoon garlic powder

Salt & black pepper to taste

Olive oil (for greasing dish)

Optional Add-Ins:

Sautéed mushrooms

Diced bell peppers

Cooked Italian sausage

Fresh basil for garnish

Instructions

1️⃣ Cook the Noodles

Bring a large pot of salted water to a boil.

Cook lasagna noodles according to package directions until al dente (slightly firm).

Drain and rinse with cool water to stop cooking.

Lay noodles flat on parchment paper or a baking sheet to prevent sticking.

2️⃣ Prepare the Filling

In a mixing bowl combine:

Ricotta cheese

Egg (if using)

Italian seasoning

Garlic powder

Salt & pepper

Parmesan cheese (optional)

Mix until smooth and creamy.

3️⃣ Assemble the Rollups

Spread about 2 tablespoons of ricotta mixture evenly over each noodle.

Add a layer of pepperoni slices (about 6–8 slices per noodle).

Sprinkle a small handful of mozzarella over the pepperoni.

Carefully roll each noodle tightly from one end to the other.

4️⃣ Prepare the Baking Dish

Preheat oven to 350°F (175°C).

Lightly grease a 9×13-inch baking dish with olive oil.

Spread about ½ cup pizza sauce on the bottom of the dish.

Place each rollup seam-side down in the dish.

5️⃣ Add Sauce & Cheese

Spoon remaining pizza sauce over the rollups.

Sprinkle remaining mozzarella cheese evenly on top.

Add extra pepperoni on top if desired.

6️⃣ Bake

Cover with foil and bake for 15 minutes.

Remove foil and bake another 5–10 minutes, until cheese is melted and bubbly.

For a golden top, broil for 1–2 minutes (watch carefully).

Garnish & Serve

Let rest for 5 minutes before serving.

Garnish with fresh basil or parsley.

Serve with garlic bread or a simple green salad.

Storage & Reheating

Refrigerator: Store up to 4 days in airtight container.

Freezer: Freeze before or after baking for up to 2 months.

Reheat: Bake at 350°F until heated through or microwave individual portions.

✔ Don’t overcook noodles — they’ll soften more in the oven.

✔ Use whole-milk ricotta for extra creaminess.

✔ Add a pinch of red pepper flakes if you like heat.
