Maple Harvest Roasted Vegetables with Feta, Walnuts & Cranberry Honey Glaze

Ingredients
For the Roasted Vegetables
2 cups butternut squash, peeled and cubed
2 cups Brussels sprouts, halved
2 large carrots, sliced into rounds
1 medium sweet potato, peeled and cubed
2 tablespoons olive oil
1 tablespoon maple syrup
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and black pepper, to taste
For the Cranberry Honey Glaze
1/3 cup dried cranberries
2 tablespoons honey
1 tablespoon balsamic vinegar
1 tablespoon orange juice
1 teaspoon Dijon mustard
For Topping
1/2 cup crumbled feta cheese
1/3 cup chopped walnuts, toasted
Fresh parsley or thyme for garnish
Instructions
Preheat the Oven
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Season the Vegetables
In a large bowl, combine the butternut squash, Brussels sprouts, carrots, and sweet potato. Drizzle with olive oil and maple syrup, then season with garlic powder, smoked paprika, salt, and pepper. Toss well to coat evenly.
Roast Until Caramelized
Spread the vegetables in a single layer on the prepared baking sheet. Roast for 30–35 minutes, stirring halfway through, until golden brown and tender with crispy edges.
Prepare the Glaze
While the vegetables roast, combine the dried cranberries, honey, balsamic vinegar, orange juice, and Dijon mustard in a small saucepan over low heat. Simmer for 3–4 minutes until slightly thickened and glossy.
Assemble the Dish
Transfer the roasted vegetables to a serving platter. Drizzle generously with the cranberry honey glaze.
