Golden Crispy Banitsa with Feta & Yogurt

A flaky, buttery Balkan-style pastry filled with creamy feta cheese and baked until beautifully golden. This easy homemade banitsa is perfect for breakfast, brunch, or a cozy side dish.

 

 

 

Ingredients

400 g phyllo (filo) dough

3 eggs

1 cup plain yogurt

1/2 cup milk

200 g feta cheese, crumbled

1/2 cup melted butter or oil

1 tsp baking powder

Optional: sesame seeds for topping

Instructions

Preheat your oven to 180°C (350°F). Grease a baking dish with a little butter or oil.

In a large bowl, whisk together the eggs, yogurt, milk, and baking powder until smooth. Stir in the crumbled feta cheese.

Lay one sheet of phyllo dough in the baking dish and lightly brush with melted butter or oil. Repeat with 2–3 more sheets.

Spread a few spoonfuls of the cheese mixture over the phyllo layers.

Continue layering phyllo sheets and filling until all ingredients are used, finishing with a few sheets of phyllo on top.

Brush the top generously with melted butter or oil and sprinkle with sesame seeds if desired.

 

 

 

Bake for 35–40 minutes, or until the top is deep golden brown and crispy.

Let the banitsa cool slightly before slicing and serving.

Serving Suggestions

Serve warm with plain yogurt, fresh tomatoes, or a hot cup of tea for the ultimate comforting meal.
