Golden Crispy Puff Pastry Cream Rolls

 

 

 

Flaky, buttery, and filled with silky homemade custard cream — this puff pastry recipe creates layers that are incredibly crisp, light, and absolutely irresistible

Perfect for tea time, dessert tables, or whenever you want a bakery-style treat made right at home

Ingredients

For the Dough

100g butter, softened

2 Tbsp (24g) sugar

1/2 tsp salt

400g all-purpose flour

200ml cold water

Extra Flour

100g flour (for rolling and folding)

For the Butter Layers

250g cold butter

For the Custard Cream

250ml milk

4 Tbsp (48g) sugar

3 Tbsp (30g) cornstarch

1 egg yolk

2 Tbsp (30g) butter

A pinch of vanilla sugar

For Brushing

1 egg yolk

1 Tbsp milk

Granulated sugar for sprinkling

 

 

 

 

Instructions

Step 1: Prepare the Dough

In a large bowl, mix the softened butter, sugar, and salt. Add the flour and cold water, then knead until a soft dough forms.

Cover and let the dough rest for 20 minutes.

Step 2: Create the Layers

Roll the dough into a large rectangle on a lightly floured surface. Spread or place the cold butter over the dough, then fold it like a letter.

Roll it out again and repeat the folding process 3–4 times to create beautiful flaky layers. Chill the dough for 20 minutes between folds if needed.

Step 3: Make the Custard Cream

In a saucepan, whisk together the milk, sugar, cornstarch, and egg yolk until smooth.

Cook over medium heat, stirring constantly, until thick and creamy. Remove from heat and stir in the butter and vanilla sugar.

Let the custard cool completely.

Step 4: Shape the Pastries

Roll out the chilled dough and cut into strips or rectangles.

Fill with the cooled custard cream and shape into rolls, twists, or pockets.

Place them on a parchment-lined baking tray.

Step 5: Bake

Mix the egg yolk with milk and brush over the pastries. Sprinkle generously with granulated sugar.

Bake in a preheated oven at 190°C (375°F) for 20–25 minutes, or until deeply golden, puffed, and crispy.

Serving Suggestion

Serve warm with coffee, tea, or a dusting of powdered sugar for the ultimate bakery-style dessert experience
