Oven-Baked 4-Ingredient Cheesy Potato Stacks
These cheesy potato stacks are crispy on the edges, soft in the middle, and packed with buttery, cheesy flavor. They’re baked in a muffin tin, which gives them their beautiful layered shape and golden crust. Perfect for holidays like Easter or as a comforting side dish for family dinners.
Servings: 12 potato stacks (about 6 servings)
Ingredients
2 pounds russet or Yukon Gold potatoes, scrubbed (peeled if you prefer)
4 tablespoons unsalted butter, melted
1½ teaspoons kosher salt (or 1 teaspoon table salt)
1½ cups shredded sharp cheddar cheese
Instructions
1️⃣ Preheat the Oven
Preheat your oven to 400°F (200°C).
Lightly grease a 12-cup muffin tin with a little melted butter or nonstick spray so the potato stacks release easily after baking.
2️⃣ Slice the Potatoes
Slice the potatoes into very thin rounds, about 1/8 inch thick.
A mandoline slicer works best for even slices.
If using a knife, try to keep the slices similar in thickness so they cook evenly.
3️⃣ Season the Potatoes
Place the potato slices in a large bowl.
Drizzle the melted butter over the potatoes.
Sprinkle with salt.
Toss gently with your hands until all the slices are lightly coated with butter and seasoning.
4️⃣ Assemble the Potato Stacks
Sprinkle about 2 tablespoons of shredded cheddar cheese into the bottom of each muffin cup.
Stack the potato slices vertically or in small layered stacks inside each cup until they reach the top.
Sprinkle a little more cheese on top of each stack.
The stacks may look tall at first, but they will shrink slightly while baking.
5️⃣ Bake
Place the muffin tin in the oven and bake for 45–50 minutes, or until:
The potatoes are tender
The edges are crispy and golden
The cheese is bubbly and lightly browned
If the tops brown too quickly, loosely cover with foil during the last 10 minutes of baking.
6️⃣ Cool and Serve
Let the potato stacks cool in the pan for 5 minutes.
Then carefully loosen them with a knife or small spatula and lift them out.
Serve warm, when the cheese is melty and the edges are crisp.
