Ingredients (Makes 18–24 bites)
1 sheet frozen puff pastry, thawed (about 8–10 oz)
4 oz brie cheese, rind on, cut into small cubes
1/2 cup thick peach preserves or peach jam
Instructions
Preheat your oven to 400°F (200°C) and position the rack in the center.
Line a baking sheet with aluminum foil and lightly grease it with oil or nonstick spray.
On a lightly floured surface, roll out the puff pastry slightly to smooth it, then cut it into small squares (about 2–2.5 inches each).
Place each square onto the prepared baking sheet.
Add a cube of brie to the center of each square, then top with about a teaspoon of peach preserves.
