Grandpa’s Hearty 4-Ingredient “Poor Man’s” Stew

Grandpa’s Hearty 4-Ingredient “Poor Man’s” Stew (Rich, Comforting & Budget-Friendly)
There’s something timeless about a simple pot of stew simmering on the stove. This humble recipe, passed down from leaner days, transforms just a handful of everyday ingredients into a deeply satisfying meal. With tender potatoes, savory ground meat, and a rich, slow-developed gravy, it’s the kind of dish that fills your kitchen with warmth—and your table with comfort.
Servings: 4
Ingredients:
500 g (1 lb) ground beef (or any ground meat you prefer)
4 medium potatoes, peeled and diced
1 large onion, chopped
3 cups beef broth (or water with a bouillon cube)
Salt and black pepper, to taste
Instructions:
Brown the meat
In a large pot or deep skillet over medium heat, cook the ground meat until fully browned. Break it apart with a spoon as it cooks. Drain excess fat if needed.
Add onion
Stir in the chopped onion and cook for 3–4 minutes until softened and fragrant.
Build the stew
Add the diced potatoes and pour in the broth. Stir everything together, making sure the potatoes are mostly covered with liquid.
Season and simmer
Season with salt and black pepper. Bring to a gentle boil, then reduce the heat to low. Cover and let it simmer for 30–40 minutes, stirring occasionally, until the potatoes are tender.
Thicken naturally
As the potatoes cook, they release starch that thickens the broth into a rich, hearty gravy. If you prefer it thicker, lightly mash a few potato pieces directly in the pot.
Serve hot
Taste and adjust seasoning if needed, then serve warm.
Serving Suggestions:
Pair with crusty bread, biscuits, or cornbread to soak up the savory gravy
Add a simple side like green beans, a fresh salad, or buttered vegetables
For a homestyle touch, serve with coleslaw or applesauce on the side
Tips & Variations:
Add a clove of garlic or a pinch of paprika for extra depth
Swap beef for ground turkey or sausage for a different flavor
Toss in carrots or peas if you want to stretch the stew even further
Simple, filling, and full of old-fashioned flavor—this stew proves that you don’t need much to make a meal that truly satisfies.
