The Secret Ingredient:
A thin layer of mayonnaise on the outside of the bread instead of butter.
It creates an ultra-golden crust and enhances the flavor beautifully!
Ingredients (Makes 2 sandwiches)
4 slices good-quality bread (sourdough or white sandwich bread)
4 slices sharp cheddar cheese
2 slices mozzarella or Swiss cheese (optional, for extra melt)
4 teaspoons mayonnaise (for spreading on the outside)
1 tablespoon butter (optional, for richer flavor in the pan)
Pinch of salt (optional)
Instructions
1️⃣ Prepare the Bread
Spread mayonnaise evenly on one side of each slice of bread.
These mayo sides will face outward in the pan.
2️⃣ Add the Cheese
Flip the slices over (mayo side down).
Layer cheddar and mozzarella on two slices.
Top with the remaining slices, mayo side facing out.
3️⃣ Cook Low & Slow
Heat a skillet over medium-low heat.

Place sandwiches in the pan and cook for 3–4 minutes per side, pressing gently with a spatula.
Cook until:
The bread is deeply golden brown
The cheese is completely melted
