Hearty Beef and Potato Casserole

This Beef and Potato Casserole is a comforting, easy-to-make dish perfect for weeknight dinners or family meals. It combines ground beef, potatoes, onions, creamy mushroom sauce, garlic, cheese, and rosemary for a savory and aromatic casserole that melts in your mouth.

Cream or half-and-half

Condensed cream of mushroom soup

1 can (10.5 oz / 300 g)

Shredded cheddar cheese

1–2 cups

Fresh rosemary, finely chopped

1–2 teaspoons

Salt

1 teaspoon (adjust to taste)

Black pepper

1/2 teaspoon

Olive oil or butter

2 tablespoons

Optional: chopped parsley for garnish

Instructions

1. Preheat the oven

Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

2. Cook the beef mixture

Heat olive oil in a large skillet over medium heat.

Add ground beef and cook until browned, about 6–8 minutes.

Stir in diced onion and garlic, cooking until fragrant and softened, about 3 minutes.

Season with salt, pepper, and rosemary.

Drain excess fat if necessary.

3. Prepare the creamy sauce

In a bowl, combine:

Beef broth

Cream

Mushroom soup

Mix until smooth.

4. Layer the casserole

Spread the diced potatoes evenly in the prepared baking dish.

Pour the beef and onion mixture over the potatoes.

Pour the cream and mushroom soup mixture evenly over the top.

Sprinkle with 1 cup of shredded cheddar cheese.

5. Bake

Cover the dish with foil and bake for 35–40 minutes, until the potatoes are tender.

Remove the foil and bake for an additional 10–15 minutes, until the cheese is golden and bubbly.

6. Garnish and serve

Sprinkle with fresh parsley if desired.

Let the casserole rest for 5 minutes before serving.
