Hearty Rustic Tomato Lentil Soup with Garden Greens

There’s something timeless about a simmering pot of soup filling the kitchen with warmth and rich, comforting aromas. This rustic tomato lentil soup is deeply satisfying, packed with tender lentils, vibrant vegetables, and fresh greens. Ingredients

2 tablespoons olive oil

1 large onion, finely chopped

2 celery stalks, finely chopped

2 medium carrots, finely chopped

3 garlic cloves, minced

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 teaspoon ground cumin

1/2 teaspoon paprika

1/2 teaspoon dried oregano

1 tablespoon tomato paste

1 can (400 g) chopped tomatoes

1 cup red lentils, rinsed

1/3 cup small pasta or couscous-style grains

6 cups vegetable or chicken stock

2 cups chopped spinach or kale

1 small zucchini, finely diced

1 bay leaf

1 tablespoon fresh lemon juice

2 tablespoons chopped fresh parsley

 

 

 

Instructions

Build the Flavor Base

Heat olive oil in a large pot over medium heat. Add onion, celery, and carrots. Cook for 6–8 minutes, stirring occasionally, until softened and fragrant.

Add Aromatics & Spices

Stir in garlic, salt, pepper, cumin, paprika, and oregano. Cook for about 30 seconds until aromatic. Add tomato paste and cook for another minute to deepen the flavor.

Incorporate Tomatoes

Pour in the chopped tomatoes, stirring well. Let simmer for 2–3 minutes so the flavors begin to meld.

Simmer the Soup

Add lentils, zucchini, bay leaf, and stock. Bring to a gentle boil, then reduce heat and simmer uncovered for about 20 minutes, stirring occasionally.

Add Grains for Texture

Stir in the pasta or couscous-style grains. Continue simmering for 10–12 minutes until tender and the soup becomes slightly thick and hearty.

Finish with Greens

Add spinach or kale and cook for 3–5 minutes until wilted. Remove the bay leaf, then stir in lemon juice and fresh parsley.

Taste & Serve

Adjust seasoning if needed. Let the soup rest for a few minutes before serving to allow flavors to settle. Serve warm with crusty bread on the side.
