Hearty Slimming Vegetable Soup

Ingredients
2 onions, finely chopped
4–5 potatoes, peeled and diced
2 carrots, sliced
1 zucchini, chopped
1 red bell pepper, diced
2 celery stalks, sliced
2 cloves garlic, minced
1 tablespoon olive oil
1.5 liters (6 cups) vegetable broth or water
Salt, to taste
Black pepper, to taste
1 teaspoon paprika
1 teaspoon Italian herbs or mixed dried herbs
Fresh parsley or dill, chopped
Instructions
Sauté the vegetables
Heat olive oil in a large pot over medium heat. Add the onions and cook until soft and fragrant. Stir in the garlic and cook for 1 minute.
Add the vegetables
Add the potatoes, carrots, zucchini, bell pepper, and celery. Stir well to combine.
Simmer the soup
Pour in the vegetable broth or water. Season with salt, black pepper, paprika, and herbs. Bring to a boil, then reduce the heat and simmer for 25–30 minutes until the vegetables are tender.
Finish and serve
Sprinkle with fresh parsley or dill before serving. Enjoy warm with a squeeze of lemon for extra freshness.
