One-Pan Honey Beer Chicken & Crispy Potatoes

Juicy chicken thighs, tender potatoes, sweet peppers, and a rich honey-beer sauce come together in one pan for the ultimate comforting meal. Easy to prepare, incredibly flavorful, and perfect for busy weeknights or relaxed weekend dinners.
Ingredients
6 chicken thighs
1 onion, sliced
2 garlic cloves, minced
1½ glasses beer
2 teaspoons honey
900 g (2 lb) potatoes, cut into chunks
1 bell pepper, sliced
2 sprigs fresh rosemary
2 bay leaves
Salt, to taste
Black pepper, to taste
Paprika, to taste
Olive oil
Instructions
1. Prepare the Chicken
Season the chicken thighs generously with salt, black pepper, and paprika. Drizzle with olive oil and rub the seasoning well into the chicken.
2. Sear for Extra Flavor
Heat a large oven-safe skillet or baking dish over medium-high heat. Sear the chicken thighs skin-side down for 4–5 minutes until golden brown. Flip and cook for another 2 minutes. Remove and set aside.
3. Cook the Vegetables
In the same pan, add the onion, garlic, and bell pepper. Sauté for 3–4 minutes until softened and fragrant.
4. Add Potatoes & Sauce
Add the potatoes, rosemary, and bay leaves. Stir well to coat everything in the flavorful juices. Pour in the beer and mix in the honey.
5. Bake to Perfection
Return the chicken to the pan, placing it over the potatoes. Cover loosely with foil and bake at 200°C (400°F) for 40 minutes.
Remove the foil and bake for another 20–25 minutes until the chicken is crispy and beautifully browned and the potatoes are tender.
Serving Suggestion
Serve hot with a fresh green salad or warm crusty bread to soak up the delicious sauce.

Use dark beer for a deeper, richer flavor.
Add carrots or mushrooms for extra vegetables.
