Ingredients (Serves 4–6)
1 lb (450 g) ground beef (80–85% lean)
1 medium yellow onion, finely chopped
1 teaspoon salt, divided
½ teaspoon black pepper, divided
3 cups frozen shredded hash browns, thawed
1 can (10.5 oz / 300 g) condensed cream of mushroom soup
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a medium baking dish (about 8×10 inches).
In a skillet over medium heat, cook the ground beef and chopped onion together until the beef is browned and fully cooked. Drain any excess fat.
Season the mixture with half of the salt and pepper, then spread it evenly in the prepared baking dish.
In a bowl, combine the thawed hash browns with the cream of mushroom soup. Add the remaining salt and pepper, and mix well.
Spread the potato mixture evenly over the beef layer, smoothing the top.
Bake uncovered for 40–50 minutes, or until the top is golden brown, slightly crisp, and bubbling around the edges.
