Ingredients
For the Coconut Layer
2 cups (160 g) shredded coconut (sweetened or unsweetened)
1 can (300–400 g) sweetened condensed milk
1 teaspoon vanilla extract
Pinch of salt
For the Chocolate Topping
1½ cups (250 g) chocolate chips or chopped chocolate
2 tablespoons heavy cream or coconut oil
Instructions
Prepare the Pan
Line an 8×8-inch baking pan or container with parchment paper.
Make the Coconut Base
In a bowl, mix the shredded coconut, sweetened condensed milk, vanilla extract, and salt until fully combined.
Press and Chill
Press the mixture evenly into the prepared pan using the back of a spoon. Chill in the refrigerator for 20–30 minutes.
Melt the Chocolate
In a microwave-safe bowl, melt the chocolate with the heavy cream or coconut oil in 20-second intervals, stirring until smooth.
Add the Chocolate Layer
Pour the melted chocolate over the chilled coconut layer and spread evenly.
Chill Again
Refrigerate for at least 1 hour, or until fully set.
