Ingredients
For the Chicken
3 boneless, skinless chicken breasts
150g mozzarella cheese, sliced
2 medium tomatoes, sliced
Fresh basil leaves
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and black pepper, to taste
For the Balsamic Glaze
½ cup balsamic vinegar
1 tablespoon honey
Instructions
Prepare the Chicken
Using a sharp knife, carefully cut a pocket into the side of each chicken breast without slicing all the way through.
Stuff the Chicken
Fill each pocket with mozzarella slices, tomato slices, and fresh basil leaves. Secure with toothpicks if needed.
Season
Rub the chicken with olive oil, then season both sides with garlic powder, Italian seasoning, salt, and black pepper.
Cook the Chicken
Heat a large skillet over medium heat. Sear the chicken for 4–5 minutes per side until golden brown.
Transfer to a preheated oven at 190°C (375°F) and bake for 15–18 minutes, or until fully cooked and the cheese is melted.
Make the Glaze
While the chicken bakes, simmer the balsamic vinegar and honey in a small saucepan for 5–7 minutes until slightly thickened.
