Lemon Herb Oven-Baked Fish with Golden Seasoned Potatoes

 

A simple, flavorful one-pan dish where tender whole fish is baked alongside perfectly seasoned potatoes, infused with garlic, lemon, and warm spices for a fresh and comforting meal.

Ingredients:

2 whole fish (cleaned)

2 potatoes, sliced

1 onion, sliced

½ cup cherry tomatoes

¼ cup olive oil

1 tbsp garlic, minced

1 tsp salt

1 tsp black pepper

1 tsp paprika

½ tsp cumin

Juice of 1 lemon

Lemon slices (for topping)

 

 

 

 

Instructions:

Preheat your oven to 200°C (400°F).

In a large baking tray, arrange the sliced potatoes and onions as a base.

Drizzle with olive oil and season with salt, black pepper, paprika, and cumin. Toss lightly to coat.

Place the whole fish on top of the vegetables.

In a small bowl, mix olive oil, minced garlic, and lemon juice. Brush or drizzle this mixture over the fish.

Add cherry tomatoes around the tray and place lemon slices over the fish.

Cover with foil and bake for 25 minutes.

Remove foil and bake for another 10–15 minutes until the fish is golden and the potatoes are tender.

 

 

 

 

Serving:

Serve hot straight from the oven with extra lemon juice on top for a bright, fresh finish.
