Mini Zucchini & Ham Quiches | 25-Min Savory Bites

 

 

 

Ingredients for 6 tarts:

 

–  1 sheet puff pastry or shortcrust, cut into circles

–  1 small zucchini, thinly sliced

–  3-4 slices ham, folded

–  ½ cup shredded cheese: mozzarella or gruyere

–  2 eggs + ¼ cup cream or milk

–  Salt, pepper, pinch of nutmeg

 

 

 

Method:

 

1. * Prep*: Preheat oven to 400°F / 200°C. Press pastry into a muffin tin.

2. * Layer*: Add zucchini slices + cheese to each shell.

3. * Pour*: Whisk eggs, cream, salt, pepper, nutmeg. Pour over fillings.

4. * Top*: Add folded ham on top.

5. * Bake*: 18-22 mins until golden + set in the center. Cool 5 mins.
