No-Bake Mango Charlotte Delight

A light, creamy, and refreshing dessert that highlights the natural sweetness of ripe mangoes—perfect for warm days and effortless entertaining.

 

 

 

Ingredients

3 ripe mangoes

2 cups plain natural yogurt (unsweetened)

1 tablespoon honey or any natural sweetener

1 teaspoon vanilla extract

1 pack Mary-style biscuits (or similar tea cookies)

2 tablespoons unflavored gelatin

1/4 cup water (to bloom the gelatin)

 

 

 

Instructions

1. Prepare the Mango Puree

Peel and chop the mangoes, then blend them until smooth and creamy. Set aside.

2. Make the Creamy Filling

In a large bowl, mix the yogurt, honey, and vanilla extract. Add the mango puree and stir until well combined.

3. Dissolve the Gelatin

In a small bowl, sprinkle the gelatin over the water and let it sit for 5 minutes (this is called blooming). Then gently heat it (in the microwave or over a water bath) until fully dissolved—do not boil.

4. Combine Everything

Slowly pour the dissolved gelatin into the mango mixture while stirring continuously to avoid lumps.

5. Assemble the Charlotte

Line a mold or springform pan with the Mary biscuits, placing them along the sides and base. Pour the mango mixture into the center, smoothing the top.

 

 

 

 

6. Chill to Set

Refrigerate for at least 4 hours, or until fully set and firm.

Serving  (Tips)

Decorate with fresh mango slices or mint leaves for a beautiful finish.

For extra flavor, lightly soak the biscuits in milk or juice before assembling.

Serve chilled for the best texture and taste.
