Old-Fashioned Rice Pudding (with Crackling Sugar Crown)

This classic rice pudding is slow-simmered on the stovetop until creamy and tender, then finished with a thin layer of broiled sugar that crackles like crème brûlée. It’s humble, nostalgic, and deeply comforting — ready in about 90 minutes of patient love.

 

Ingredients (8 Simple Staples)

3/4 cup short-grain white rice (or Arborio)

4 cups whole milk

1/2 cup heavy cream

1/2 cup granulated sugar

1/4 tsp salt

1 vanilla bean (split) or 2 tsp pure vanilla extract

1/2 tsp ground cinnamon (optional)

3–4 tbsp extra sugar (for the brûlée topping)

 

 

 

 

Instructions

1️⃣ Rinse the Rice

Rinse rice under cool water until the water runs mostly clear. Drain well.

2️⃣ Begin the Simmer

In a heavy-bottomed pot, combine:

Rice

Milk

Cream

Salt

Vanilla bean (if using)

Bring to a gentle simmer over medium-low heat, stirring often to prevent sticking.

3️⃣ Slow & Steady Cooking (45–60 minutes)

Reduce heat to low.

Simmer gently, uncovered, stirring every 5–10 minutes.

The pudding is ready when:

The rice is very tender

The texture is thick and creamy

It coats the back of a spoon

Stir in sugar (and vanilla extract if using extract). Simmer 5 more minutes.

If it thickens too much, add a splash of warm milk.

4️⃣ Rest & Set

Remove from heat. Let rest 10 minutes — it will thicken more as it cools.

Spoon into a baking dish or individual ramekins.

You can refrigerate at this stage for up to 2 days.

5️⃣ Create the Sugar Crown

Just before serving:

Sprinkle 1–2 teaspoons sugar evenly over each portion.

Broil on high for 2–4 minutes until melted and golden.

(Watch carefully — it browns quickly!)

Let sit 2–3 minutes to harden into a crackly top.

Optional Variations

Persian Touch: Add 1 tsp rose water + crushed pistachios

Raisin Comfort: Stir in 1/3 cup soaked raisins

Orange Zest: Add 1/2 tsp finely grated zest

Extra Custardy: Stir in 1 beaten egg during last 5 minutes (cook gently)

Make-Ahead & Gifting

Store covered in fridge up to 3 days.

Reheat gently with a splash of milk.

Gift in mason jars with a cinnamon stick tied in twine.

Brûlée just before serving for best crackle.
