Ingredients
5 medium apples, peeled and thinly sliced
2 large eggs
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup milk
2 tablespoons melted butter
3/4 cup all-purpose flour
1 teaspoon baking powder
A pinch of salt
Powdered sugar, for dusting
Instructions
Preheat the oven
Set your oven to 350°F (175°C). Grease and line a loaf pan or small cake pan with parchment paper.
Prepare the batter
In a bowl, whisk the eggs and sugar until light and creamy. Add vanilla, milk, and melted butter.
Mix the dry ingredients
Stir in the flour, baking powder, and salt until smooth and lump-free.
Add the apples
Slice the apples very thinly using a knife or mandoline. Fold them gently into the batter so every slice is coated.
Bake
Pour the mixture into the prepared pan and smooth the top. Bake for 45–55 minutes, or until golden and set in the center.
Cool & serve
Let the cake cool slightly before slicing. Dust with powdered sugar and serve warm or chilled.
