These slow cooker scalloped potatoes are simple, creamy, and perfect for a cozy Sunday meal. 3 pounds Yukon Gold potatoes, scrubbed and very thinly sliced (about ⅛ inch thick)
2 cups heavy cream
2½ cups shredded sharp cheddar cheese, divided
1½ teaspoons kosher salt, plus more to taste
(Optional for greasing the slow cooker: butter or non-stick spray)
Directions
1. Prepare the slow cooker
Lightly grease a 5–6 quart slow cooker with butter or nonstick spray. This prevents sticking and helps the edges brown slightly.
2. Season the cream
In a bowl or large measuring cup, whisk together:
heavy cream
kosher salt
Mix until the salt dissolves. This seasoned cream will soak into the potatoes and create the sauce.
3. Start layering
Place a layer of thinly sliced potatoes in the bottom of the slow cooker.
Sprinkle a small handful of shredded cheddar cheese over the potatoes.
Drizzle a few spoonfuls of the salted cream over the layer.
4. Repeat the layers
Continue layering in this order until everything is used:
Potatoes
Cheese
Cream
Finish with the remaining cheese on top.
5. Cook slowly
Cover and cook:
LOW: 6–7 hours
or
HIGH: 3–4 hours
The potatoes should be very tender when pierced with a fork, and the sauce should be thick and creamy.
6. Rest before serving
Turn off the slow cooker and let the potatoes sit uncovered for 10–15 minutes. This allows the sauce to thicken slightly.
Taste and add more salt if needed.
