This easy slow cooker recipe gives you tender, juicy pork chops coated in a sweet, garlicky sauce with a delicious sticky finish. Perfect for busy weeknights!
Ingredients
4 boneless or bone-in pork chops (about 1 inch thick)
Salt and black pepper, to taste
1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon onion powder
Honey Garlic Sauce:
½ cup honey
½ cup low-sodium soy sauce
4 cloves garlic, minced
2 tablespoons ketchup
1 tablespoon olive oil
½ teaspoon dried thyme (optional)
1 tablespoon cornstarch
2 tablespoons water
For the Crunchy Finish:
1 tablespoon sesame seeds
2 tablespoons chopped green onions
Optional: ½ cup toasted panko breadcrumbs
Instructions
1️⃣ Season the Pork
Pat pork chops dry. Season both sides with salt, pepper, paprika, garlic powder, and onion powder.
2️⃣ Prepare the Sauce
In a bowl, whisk together honey, soy sauce, minced garlic, ketchup, olive oil, and thyme.
3️⃣ Add to Crockpot
Place pork chops in the slow cooker. Pour sauce over them.
Cover and cook:
Low: 4–5 hours
High: 2–3 hours
Until pork is tender and fully cooked (internal temperature 145°F / 63°C).
4️⃣ Thicken the Sauce
Remove pork chops and set aside.
Mix cornstarch with water to make a slurry. Stir into the sauce in the crockpot.
Cook on High for 10–15 minutes until thickened.
5️⃣ Optional Crunchy Finish (Highly Recommended!)
For a slightly crispy texture:
Broil pork chops in the oven for 3–5 minutes after slow cooking.
Brush extra sauce on top.
Sprinkle with toasted panko, sesame seeds, and green onions.
