These delightful Ritz Cracker Christmas Cookies are a sweet and salty treat perfect for the holiday season. With a creamy filling and a chocolate coating, they are sure to be a hit at any gathering!

 

 

 

Ingredients

1 box Ritz crackers

1 cup creamy peanut butter (or your choice of nut butter)

1 cup powdered sugar

1 cup semi-sweet chocolate chips

1 tablespoon vegetable oil

Sprinkles or crushed candy canes, for decoration (optional)

 

 

 

Instructions

1. Prepare the Filling:

In a mixing bowl, combine the peanut butter and powdered sugar until well blended.

2. Assemble the Cookies:

Spread a generous amount of the peanut butter mixture on one Ritz cracker and top it with another cracker to create a sandwich. Repeat with the remaining crackers until all filling is used.

3. Chill the Sandwiches:

Place the filled cracker sandwiches on a baking sheet and refrigerate for about 30 minutes to firm up.

4. Melt the Chocolate:

In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.

5. Dip the Cookies:

Remove the cracker sandwiches from the refrigerator. Dip each sandwich into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off.

6. Decorate:

Place the dipped cookies back on the baking sheet lined with parchment paper. While the chocolate is still wet, sprinkle with festive sprinkles or crushed candy canes if desired.

7. Set the Chocolate:

Let the cookies sit at room temperature or in the refrigerator until the chocolate has fully set.

 

 

 

8. Serve:

Once the chocolate is firm, serve the Ritz Cracker Christmas Cookies on a festive platter, or store them in an airtight container.
