Slow Cooker Apple Cider Pork Roast

This Slow Cooker Apple Cider Pork Roast is the kind of cozy dinner that makes the whole house smell incredible. Ingredients

3–4 lb pork shoulder or pork loin roast

2 cups apple cider

1 large onion, sliced

3 cloves garlic, minced

2 apples, sliced

2 tablespoons brown sugar

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon rosemary

Salt and black pepper, to taste

2 tablespoons olive oil

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons water

 

 

 

Instructions

Season the Pork

Pat the pork roast dry and season generously with salt and black pepper.

Sear for Flavor

Heat olive oil in a large skillet over medium-high heat. Sear the pork on all sides until golden brown.

Prepare the Slow Cooker

Place onions and apple slices in the bottom of the slow cooker. Add garlic, thyme, and rosemary.

Make the Cider Sauce

In a bowl, whisk together apple cider, brown sugar, and Dijon mustard. Pour over the pork roast.

Slow Cook

Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the pork is fork-tender.

Optional Gravy

Mix cornstarch with water to create a slurry. Stir into the cooking liquid during the last 15 minutes to thicken into a rich gravy.

Serve & Enjoy
