Slow Cooker Ham and Potatoes with Bacon

Slow Cooker Ham and Potatoes with Bacon

A hearty, comforting meal perfect for busy days and chilly evenings

There’s nothing better than coming home to the warm, inviting aroma of a slow-cooked meal. This slow cooker ham and potatoes with bacon is a cozy family favorite, especially on colder days. It brings together tender potatoes, savory ham, and crispy bacon, all gently cooked to create a rich and satisfying dish that everyone will love.

While this recipe is filling on its own, you can easily turn it into a complete meal by serving it with a fresh green salad tossed in a light vinaigrette, along with steamed green beans. For extra comfort, add some warm, crusty bread to soak up the flavorful broth.

Servings

6 servings

Ingredients

1.5 lbs potatoes, peeled and cut into 1-inch pieces

1 lb cooked ham, cubed

6 slices bacon, cooked and crumbled

1 onion, diced

3 cloves garlic, minced

1 cup chicken broth

1 teaspoon dried thyme

1/2 teaspoon black pepper

1 cup shredded cheddar cheese (optional)

1/4 cup fresh parsley, chopped (for garnish)

Directions

Place the chopped potatoes at the bottom of the slow cooker.

Add the cubed ham, crumbled bacon, diced onion, and minced garlic on top.

Pour the chicken broth over everything, ensuring the liquid reaches the bottom.

Sprinkle the thyme and black pepper evenly over the ingredients.

Cover and cook on low for 6–7 hours or high for 3–4 hours, until the potatoes are tender.

About 15 minutes before serving, sprinkle the shredded cheddar cheese over the top (if using), then cover again and allow it to melt.

Give everything a gentle stir, taste, and adjust seasoning if needed.

Garnish with fresh parsley before serving.

Tips & Variations

For a creamier texture, stir in 1/2 cup of heavy cream or sour cream at the end.

Add carrots or celery for extra vegetables and flavor.

Use smoked ham or turkey ham for a slightly different taste.

If you like a thicker stew, mash a few potatoes directly in the slow cooker before serving.

Enjoy this simple, comforting dish that’s perfect for family dinners or leftovers the next day!
