I. Pasta & Meatballs
1 lb elbow macaroni, cooked al dente and drained
1.5 lbs cooked meatballs (small to medium) – store-bought or homemade
1 tablespoon olive oil
II. Velvety Cheese Sauce (Roux-Based)
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
4 cups whole milk (or 2 cups milk + 2 cups half-and-half for extra richness)
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika (optional)
Salt and black pepper, to taste
III. Topping
1 cup shredded mozzarella or cheddar cheese
1/2 cup breadcrumbs (optional, for a crispy topping)
1 tablespoon melted butter (if using breadcrumbs)
Fresh parsley, chopped (for garnish)
Directions
1. Prepare the Oven
Preheat your oven to 375°F (190°C). Lightly grease a large baking dish.
2. Make the Cheese Sauce
In a large saucepan, melt the butter over medium heat.
Whisk in the flour and cook for about 1–2 minutes until lightly golden (this forms the roux).
Gradually add the milk, whisking constantly to avoid lumps. Continue cooking until the sauce thickens and becomes smooth.
Reduce the heat to low, then stir in the cheddar, mozzarella, and Parmesan cheeses. Mix until fully melted and creamy.
Season with garlic powder, onion powder, paprika (if using), salt, and pepper.
3. Combine Ingredients
In a large bowl, mix the cooked macaroni and meatballs.
Pour the cheese sauce over the mixture and gently stir until everything is evenly coated.
4. Assemble the Casserole
Transfer the mixture into the prepared baking dish and spread evenly.
Sprinkle the top with additional shredded cheese.
If using breadcrumbs, mix them with melted butter and sprinkle over the cheese layer.
5. Bake
Bake uncovered for 20–25 minutes, or until the top is golden, bubbly, and slightly crispy.
