Creamy Cheese Chicken Rollatini

Creamy Cheese Chicken Rollatini (Golden, Cheesy & Restaurant-Style Comfort)
This Chicken Rollatini is a rich, comforting dish that feels like something straight off a restaurant menu, yet it’s simple enough to make at home. Tender chicken breasts are rolled up with a creamy blend of ricotta, mozzarella, and Parmesan, then baked until golden, bubbly, and irresistibly cheesy inside.
It’s the kind of meal that looks impressive on the plate but comes together with just a few simple ingredients—perfect for family dinners or when you want something a little special.
Ingredients (Serves 4)
4 boneless, skinless chicken breasts (about 1.5 pounds)
1 cup ricotta cheese
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
Salt and black pepper, to taste
1 teaspoon garlic powder (optional, for extra flavor)
1 teaspoon dried Italian seasoning (optional)
Olive oil or melted butter, for brushing
Instructions
Prepare the Chicken
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
Slice each chicken breast horizontally (or pound them gently) until thin and even.
Make the Cheese Filling
In a bowl, mix ricotta, mozzarella, and Parmesan until creamy and well combined. Season with salt, pepper, garlic powder, and Italian seasoning if using.
Fill & Roll
Spread a generous spoonful of the cheese mixture onto each chicken breast. Roll tightly and secure with toothpicks if needed.
Arrange in Dish
Place the rolled chicken seam-side down in the baking dish. Lightly brush the tops with olive oil or melted butter.
Bake
Bake for 25–30 minutes, or until the chicken is fully cooked and lightly golden on top. For extra color, broil for the last 2–3 minutes.
Rest & Serve
Let rest for a few minutes before serving so the cheese filling stays creamy and rich inside.
