Ingredients

1 large Russet baking potato

½ lb (225g) sirloin steak, cut into bite-sized pieces

1 tablespoon olive oil

¼ teaspoon salt

⅛ teaspoon black pepper

¼ cup shredded cheddar cheese

2 tablespoons chopped fresh chives or green onions

2 tablespoons Greek yogurt or sour cream (optional)

 

 

 

 

Instructions

1. Bake the Potato

Preheat your oven to 400°F (200°C). Wash and dry the potato thoroughly, then pierce it several times with a fork. Place it directly on the oven rack or on a baking sheet and bake for 45–60 minutes, until fork-tender.

2. Season the Steak

While the potato bakes, place the steak pieces in a bowl. Drizzle with olive oil and season with salt and pepper. Toss until evenly coated.

3. Cook the Steak

Heat a skillet over medium-high heat. Add the steak pieces in a single layer and cook for 2–4 minutes per side, until nicely browned and cooked to your preferred doneness. Remove from the skillet and set aside.

4. Prepare the Potato

Once baked, carefully remove the potato from the oven. Slice it lengthwise and gently fluff the inside with a fork to create a soft, fluffy base.

5. Load It Up

Fill the potato with the cooked steak bites and top generously with shredded cheddar cheese.

6. Melt the Cheese

Return the stuffed potato to the oven for 3–5 minutes, or until the cheese is melted and bubbly.

7. Garnish and Serve

Top with fresh chives or green onions and add a dollop of Greek yogurt or sour cream if desired. Serve immediately while hot.
