This hearty beef stew is the ultimate comfort food—tender beef slow-cooked in a deep, savory tomato broth with aromatic spices and garden vegetables. Every spoonful is rich, warming, and full of homemade flavor, perfect for family dinners or chilly evenings.
Ingredients
900 g (2 lbs) beef chuck, cut into large cubes
2 tbsp olive oil
1 medium onion, finely chopped
3 garlic cloves, minced
2 tbsp tomato paste
480 ml (2 cups) beef broth
240 ml (1 cup) crushed tomatoes or tomato sauce
2 carrots, chopped into thick chunks
1 red bell pepper, cut into pieces
2 cups fresh spinach or mixed leafy greens
1 tsp paprika
1 tsp ground cumin
½ tsp black pepper
1 tsp salt (adjust to taste)
1 tbsp flour or cornstarch mixed with 2 tbsp water (optional, for thickening)
Cooked white rice, for serving
Instructions
Pat the beef dry and season it well with salt, pepper, paprika, and cumin.
Heat olive oil in a large heavy pot over medium-high heat. Sear the beef in batches until browned on all sides, then set aside.
In the same pot, sauté the onion for 3–4 minutes until soft. Add garlic and tomato paste, cooking for 1 more minute until fragrant.
Return the beef to the pot and pour in the beef broth and crushed tomatoes. Stir well, scraping up any browned bits for extra flavor.
Bring to a gentle boil, then reduce heat to low. Cover and simmer for 1½ to 2 hours, until the beef becomes tender and rich in flavor.
Add carrots and red bell pepper, and cook for another 20–25 minutes until just tender.
Stir in spinach or greens at the end and cook until just wilted.
For a thicker stew, mix in the flour or cornstarch slurry and simmer for a few minutes until it reaches a rich, velvety texture.
Taste and adjust seasoning before serving.
