Soft & Fluffy Skillet Flatbread Pitas (No Oven Needed!

 

 

These homemade skillet flatbreads are incredibly soft, fluffy, and perfectly chewy with beautiful golden spots on the outside. They’re easy to make with simple pantry ingredients and cook right on the stovetop—no oven required! Use them for sandwiches, wraps, dipping into hummus, or serving alongside soups, curries, and grilled meats.

Ingredients

2½ cups (315 g) all-purpose flour

1 tablespoon sugar

1 teaspoon salt

1 tablespoon instant yeast

1 tablespoon olive oil

¾ to 1 cup warm water (as needed)

Extra olive oil or melted butter, for brushing (optional)

 

 

 

Instructions

In a large bowl, combine the flour, sugar, salt, and instant yeast.

Add the olive oil and gradually pour in the warm water, mixing until a soft dough forms.

Knead the dough for 8–10 minutes until smooth and elastic.

Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.

Punch down the dough and divide it into 8 equal portions. Shape each into a ball.

Cover the dough balls with a clean towel and let them rest for 15–20 minutes.

Roll each ball into a circle about ¼ inch (6 mm) thick.

Heat a dry cast-iron or nonstick skillet over medium-high heat.

Cook each flatbread for 1–2 minutes on the first side until bubbles appear and golden brown spots form. Flip and cook for another 1–2 minutes until puffed and fully cooked.

Transfer to a plate and cover with a clean kitchen towel to keep them warm and soft. Brush with melted butter or olive oil if desired.

Fill with grilled chicken, beef, or falafel.

Serve with hummus, tzatziki, baba ganoush, or garlic dip.

Pair with soups, stews, curries, or fresh salads.
