Ingredients
1½ lbs (680 g) beef stew meat or sirloin, cut into bite-sized pieces
1 tsp salt
1 tsp freshly ground black pepper
2 tbsp olive oil
2 tbsp butter
1 medium onion, finely diced
3 garlic cloves, minced
2 tbsp all-purpose flour
2 cups beef stock
1 tsp Worcestershire sauce
1 tsp soy sauce (optional, for extra depth of flavor)
½ tsp dried thyme
½ tsp paprika
Fresh chopped parsley, for garnish
Instructions
Pat the beef dry with paper towels and season generously with salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Sear the beef in batches for 2–3 minutes per side until deeply browned. Remove and set aside.
Reduce the heat to medium and melt the butter in the same skillet. Add the onion and cook for about 5 minutes until softened.
Stir in the garlic and cook for another 30 seconds until fragrant.
Sprinkle the flour over the onions and stir continuously for 1 minute to cook out the raw flour taste.
Slowly whisk in the beef stock, making sure no lumps remain.
Add the Worcestershire sauce, soy sauce (if using), thyme, and paprika. Bring to a gentle simmer.
Return the beef and any accumulated juices to the skillet. Cover and simmer for 25–35 minutes, or until the beef is fork-tender and the gravy has thickened.
Taste and adjust the seasoning with additional salt and pepper if needed.
Garnish with fresh parsley and serve hot.
