Homemade Mexican Pizzas (Taco Bell Style Copycat)
Ingredients:
1 lb ground beef
1/2 cup diced onion
1 teaspoon minced garlic
Oil for frying
1 tablespoon tomato paste
1 tablespoon taco seasoning (or to taste)
1/2 cup water
6 small flour tortillas
6 small corn tortillas
1 cup refried beans
1 1/2 cups shredded cheddar cheese
1 cup salsa or enchilada sauce
Sliced olives, tomatoes, and green onions (for topping, optional)
Instructions:
Cook the beef: In a pan over medium heat, cook the ground beef with diced onion until browned. Add garlic and cook for another minute.
Season the mixture: Stir in tomato paste, taco seasoning, and water. Let it simmer until slightly thickened. Set aside.
Crisp the tortillas: Heat oil in a pan and fry both flour and corn tortillas until golden and crispy. Drain on paper towels.
Assemble the base: Spread refried beans on one crispy tortilla, then top with seasoned beef. Place another tortilla on top to form a “pizza base.”
Add sauce and cheese: Spoon salsa or enchilada sauce over the top tortilla, then sprinkle generously with shredded cheese.
Melt and finish: Bake in the oven at 375°F (190°C) for about 8–10 minutes, or until the cheese is fully melted and bubbly.
Garnish & serve: Top with olives, tomatoes, and green onions if desired. Slice and enjoy!
